Baked cornflake catfish

1 lb catfish fillets1/2 cup buttermilk1 Tbl lemon juice2 cups corn flake crumbs1 1/2 tsp paprika1 tsp granulated garlic1/2 tsp ground white pepper1/2 tsp ground red pepper

Preheat oven to 450
Spray an ovensafe cookie cooling rack with vegetable spray. Place it on a rimmed cookie sheet
In a small bowl, mix the spices. Sprinkle on both sides of the fish.
Mix buttermilk and lemon juice in a bowl.
Dip fish first in buttermilk, then in cornflake crumbs.
Place fillets one inch apart on rack.
Bake for 20 minutes or until fish flakes easily with a fork.
