Apple Whole Wheat Pancake

Ingredients
1 cup Sourdough starter sponged overnight1 cup whole wheat flour1/2 tsp salt1 1/2 tsp baking soda (put it in last)1 tbsp Oil (canola)1/2 tsp cinnamon1/4 tsp nutmeg1 tbsp sugar1/2 cup low fat butter milk1 cup apple juice1 large eggsMix the flour, salt, cinnamon, nutmeg, buttermilk and apple juice with the sour dough starter. (prepare the starter the night before)Let set 30 minutes.add Baking soda.Separate eggs beat the yolk a bit and add to the mixture and add the oil at the same time.Whip the Egg whites to soft peaks and fold in to the mixture.fold in the grated apple at the same time.
Directions
cook on hot griddle makes about 12 6 inch pancakes
cook these on a bit lower heat, the take a bit longer to cook and they are very light and tender.
