Ingredients
1 Can of Reduced Fat Coconut Milk2 Pounds Lean Stew Beef4 Cups of Water2 Cups Yucca, raw, cubed2 Plantains, sliced thick4 Bay Leaves1 TBSP Annatto1 TSP Ground Cumin1 TSP Oregano1 TSP Ground Coriander1 TBSP Sea Salt1 TSP Black Pepper1 TSP Garlic Powder3 TBSP Cilantro, raw, chopped1/4 Cup Lime Juice
Directions
Makes roughly 8 2-cup servings.

Simply mix all ingredients in a crock pot, and cook on high for 4 hours. Remove Bay Leaves prior to serving.
