Lemon Chicken and Rice soup

Ingredients
5 cups lowfat organic chicken stock1 cup short grain or med grain rice2 cups carrots diced2 cup chopped celeryOne whole onion dicedZest and juice of one organic meyer lemon2 cups chopped white meat chicken( I use rotissere chicken)1 tbls chopped garlicseasoning to taste( I use a little salt fresh pepper and season de province)1 tbls olive oilone can lowfat 'cream of chicken' soup
Directions
saute vegitables and garlic in olive oil until soft.
Add all ingredients and simmer for about two hours or until rice is cooked through.
Makes 8-10 one cup servings
