Lemon Sponge Cake, single serving

Ingredients
1 18 oz Angel Food cake mix, dry1 18.5 oz Lemon cake mix, dry3 T, water per serving
Directions
In a large bowl, thoroughly mix together both dry cake mixes.

To make one cake, measure out 1/3 cup of the mixture and place in ceramic coffee cup. Add 3 tablespoons water and mix thoroughly. Microwave for 60 seconds.

If desired, mix together a few drops of lemon juice and approximately one tablespoon confectioners sugar for a glaze and pour over the cake after microwaving. (Nutritional information not included for glaze.)

Store remaining mix in tightly covered container or ziploc-type bag. Makes approximately 21 servings.
