Healthy quinoa salad

Ingredients
1 cup quinoa1/2 cup diced cucumbers1/2 cup diced carrots1/2 cup diced bell pepper of your choice(except green)1 tbsp chopped cilantro1 tbsp extra virgin olive oil1 tbsp balsamic vinegarThe juice of one lemon(no seeds)1/4 cup sliced almonds(roasted)
Directions
cook or soak quinoa until transparent
Chop all veggies and mix together
squeeze lemon, and drizzle oil and balsamic on top
toast almonds and top right before serving
