Apple Cake

Ingredients
1/2 cup granulated sugar1 1./4 cup splenda, grandulated or packets to equal 1 and 1/4cup.2 eggs, large2 TBL canola oil1/2 cup cooked apples, or apple sauce, unsweetened2 tsp vanilla extract2 cups white flour2 tsp. baking soda2 tsp. ground cinnamon3/4 tsp salt 6 cups chopped apples, about 5 to 6 small.1/2 cup chopped pecans.2 TBL powdered sugar for sprinking on top of baked cake.
Directions
In a bowl, mix a dry ingredience together, Flour, cinnamon salt, soda and set aside. In a large bowl, combine Sugar, Splenda, oil, eggs, vanilla and cooked apple sauce. Mix well to combine. Add the dry ingredience to combine. Don't over mix. Fold in chopped apples and chopped pecans. Place in a sprayed and floured 13 x 9 inch paking pan. Bake at 350o Bake 35 to 45 minutes until tests done and golden brown. cool on a rack. When cool.Sprinkle the top with 2 Tbl. powdered sugar. Cream cheese frosting goes very well with this too, but adds a lot of calories. A dollop of whipped topping, low cal. also goes great with this cake instead of powdered sugar or frosting.
