Beet Tartare

Ingredients
3 small beets, diced really finely (thats the trick)1 shallot, diced finely3 small cornichon, chopped finely1 tbsp capers, chopped finely1 tsp tomato ketchup1 tsp dijon1 tsp olive oil1 tsp worcestershire sauce1 tsp tabasco sauce1 tsp extra virgin olive oil (the one that tastes herbal would be the best)2 tbsp chopped chives1 cup of parsley, chopped finely2 to 3 tbsp finely chopped chivessalt and pepper
Directions
Mix everything except the parsley and the chives...
You can add the condiments to your liking, thats mine.
Let the mix rest for about 30 minutes in the fridge. before serving, add the parsley and chives. re-ajust the seasoning.
Serve with croutons and salad.
Might make your poop red, don't freak out tommorow!
