Nutty Gluten Free Waffles

1 3/4 cup Brown Rice Flour1/4 cup Quinoa Flour1 cup Potato Starch (not flour)1/2 cup Tapioca Flour/Starch1/4 cup Sugar2 Tbs. Baking Powder2 tsp. Salt3 cups Buttermilk4 eggs1/2 cup canola oil1/2 cup walnuts, finely chopped1/4 cup flax seed meal
Mix all dry ingredients together except for the walnuts and flax seed. Mix all wet ingredients together, then combine the dry with the wet and mix well. Stir walnuts and flax seed meal in last. Batter will be very thick. Pour or ladle about 1/4 cup onto each quadrant of a hot 8" waffle iron and close iron. Bake approximately five minutes. Makes 24 - 4 inch square waffles.
