Low Carb Crustless Quiche

8 large eggs1 cup heavy cream1/4 tsp Kosher salt1/8 tsp freshly ground black pepper1/8 tsp white pepper1 pinch ground nutmeg1 cup shredded cheddar cheese1 cup shredded Swish cheese1 cup coarsely crumbled cooked bacon1 cup leftover low carb vegetables2 tbsp chopped green onion (optional)
1. Preheat oven to 350. Spray 8" glass pie pan with PAM
2. Mix eggs, cream, salt, pepper, & nutmeg in a bowl, then pour mixture into pie pan
3. Sprinkle cheese, bacon (if using) and veggies over the top, then push them down into the egg mixture using your hands or the back of a spoon, spreading the fillings evenly
4. Bake 40 minutes, or until the quiche turns golden brown and a toothpick stuck in the centre comes out clean. Let the quiche rest 15 minutes before serving.
