Gluten free Vegan Cornbread

Ingredients
1 cup Rice flour, 1 1/4 c. Cornmeal4 TB Honey3 tsp Baking Powder1/2 tsp Salt1/2 cup of earth balance butter spread, melted1 1/4 cup Almond Milk (or milk of your choice)1 TB Apple Cider Vinegar1 tsp Xanthan Gum3 tsp EnerG Egg Replacer
Directions
1.Preheat oven to 400
2. In a bowl combine Flour, Cornmeal, Baking Powder, Salt, Xanthan Gum and Egg Replacer
3. In separate bowl combine Honey, Melted butter, Milk and Vinegar. mix well
4. Combine wet and dry, stirring until thickens
5. Spray 8x8 pan with non-stick spray, pour in mixture and bake 22-25 min or until toothpick comes out clean
