9 medium eggs1 cup frozen spinach, drained (or about 3 cups fresh)1/2 cup almond milk, original flavor1/3 cup Martha White self-rising flour1/2 tbsp dried basil1 medium tomato, diced (or 1/2 can diced tomatoes)5 slices bacon (or 2 slices thick cut bacon)1 tbsp dried onionadd salt and pepper to taste
preheat oven to 350 degrees. cook bacon and cut into small pieces. mix all ingredients and pour into greased muffin pan. bake 25 to 30 minutes.
