9 tomatoes2 large onions2 red peppers1 hot pepperEVOO 2 tbs3 cups chicken broth,Salt, pepper, cumin and chili powder to taste6 cloves garlic or moreMexican cheese 1/2 cup1 cup tortilla chips
roast veggies together with EVOO in oven at 350 for 20-30 minutes. Then move to dutch oven with and cook with chicken or veggie broth. Use stick mixer to puree veggies and add spices. Then add cheese and tortilla chips and puree some more, cook for 10 minutes and serve. Makes 8 servings.
