Olive Gardens Pasta E Fagoli

Ingredients
1.5 tsp olive oil16 oz extra lean ground beef1 cup onion, chopped3 carrots, slivered4 stalks celery, diced28 oz petite diced tomatoes (drained)1 cup each red and white kidney beans44 oz beef stock1.5 tsp oregano1 tsp black pepper2.5 tsp parsley1 tsp Tabasco30 oz tomato sauce5 oz Ditalini pasta
Directions
saute beef in oil. Add onions, carrots, celery and cook til veges tender. Add diced tomatoes and simmer 10 minutes. Drain and rinse beans and add to vege/beef pan along with beef stock, oregano, parsley, black pepper, Tabasco, tomato sauce and pasta. simmer 45 minutes. makes nine (9) one and a half cup servings (1.5 cup)

    Very good. Left out tobacco and pasta. Cut all in half, for only one person. Have made before and will again. - 4/27/13
