Ingredients:Leeks, 1 leek washed and sliced 1/4" slicesGarlic, 5 clove choppedMushrooms, fresh, 1 cup, pieces or slices Olive Oil, 2 tbsp Potato, raw, 2 medium (2-1/4" to 3-1/4" dia.) dicedGreen Beans (snap), 3 cup Salt, 1 tsp or to taste
Wash and slice leeks discarding dark green leaves.
chop all other ingredients.
Put in casserole dish and toss with olive oil.
Roast in 375 oven for one hour, stirring every 20 minutes or so. Salt if desired, serve. Makes 4 - 6 servings.
