* mix of wild and tame Mushrooms, fresh, 7 cup, pieces or slices * Extra Virgin Olive Oil, 3 tsp (2 turns) * Kosher Salt, 1 tsp or to taste * Pepper, black, 3 dash or to taste * *Herbs de Provance (2 tsp), * *Imagine no chicken Broth, 2 cup * Shallots, 2 medium, chopped small 3 oz dry sherry
add herbs de provance to broth in a small saucepan. bring to boil, turn down to low and keep hot.
heat oil in large nonstick fry pan. saute shallots til soft. Add mushrooms and saute. Add sherry. Add half of broth and let cook down until liquid absorbed. Add other half of broth and let cook down. Salt and pepper to taste.
