Ingredients
Red quinoa cooked~ about 1/4 cupred bell pepper 1/4 cuponion chopped 1/4 cupbaby zucchini (about 1 half) 1/4 cup, sliced in half & sliced thinChick peas 1/4 cupItalian herbs~ fresh if you have them
Directions
Saute pepper, onion, garlic & baby zucchini in olive oil until tender, add chickpeas & quinoa to that. Herbs, salt & pepper.
