Ingredients
2 1/2 cups reduced-sodium chicken broth 2/3 cup reduced-fat (lite) coconut milk 2 tablespoon grated gingerroot 1 1/3 cups uncooked regular long-grain rice 1 teaspoon grated lime peel 1 medium yellow onion cut in 1/2 inch pieces3 tablespoons flaked coconut, toasted Lime slices
Directions
Rice cooker preparation: rinse and add rice to cooker. add liquids then all other ingredients. - cook and enjoy. Makes 8 servings.
