Tahena's Vegan Leek & Potato Soup

Ingredients

* Onions, raw, 2 large (remove) * Leeks, 6 cup (remove) * Garlic, 5 clove (remove) * Coconut Oil, 1 tbsp (remove) * *Potato, raw, 7 medium (2-1/4" to 3-1/4" dia.) (remove) * Water, tap, 3000 mL (remove) * Peppers, sweet, red, raw, sliced, .5 cup (remove) * Salt, 1 tbsp (remove)
Finely dice garlic
Roughly chop onions.
Slice leeks.
Dice red pepper
Sautee until golden the garlic and onions.
Add the sliced leeks until limp
Add bite sized chunks of potatoes and red pepper
Add water to cover
Add salt and any other seasonings you like.
Simmer on medium low for 2 - 3 hours. Or until done.
Serves 16 - 20 1cup servings.
