Easy Chicken and Dumplings

Ingredients
3 celery ribs, chopped1 cup sliced fresh carrots3 cans (about 14 oz each) reduced sodium chicken broth1/2 tsp poultry seasoning1/8 tsp pepper3 cups cubed cooked chicken breast1 2/3 cups bisquik (could use reduced-fat if you want)2/3 cup fat-free milk
Directions
In Dutch oven coated with cooking spray, saute celery and carrots for 5 min. Stir in broth, poultry seasoning and pepper. Bring to a boil. Reduce heat so mixture simmers. Add the chicken.
For dumplings, combine biscuit mix and milk. Drop by tablespoonfuls onto simmering broth. Cover and simmer for 10-15 min or until toothpick inserted into a dumpling comes out clean (do not lift cover while simmering). Makes 6 servings.
