BBQ Pulled Pork Stuffed Baked Potato

4 medium baking potatoes1 cup prepared shredded BBQ pork 1 cup shredded low fat cheddar cheese4 tbsp low fat sour cream
Split open warm baked potatoes.
Heat shredded pork bbq in a pan.
Add 1/4 cup shredded cheese to each potato.
Add 1/4 cup hot shredded pork bbq to each potato.
Top each with 1 tbsp low fat sour cream and enjoy.

Super easy & quick! The potatoes baked while I was working out. I used ready made Lloyd's BBQ pork w/just a pinch of cheese & omitted the sour cream. My husband turned up his nose at first but once he tasted it he was won over. Very good. I would never have thought of this on my own. Thanks! - 1/5/11
