Potato Mushroom & Ground Turkey Casserole

1 lb ground turkey.5 cup thinly sliced red onion1 tbsp minced garlic4 oz canned mushrooms stems & pieces (drained)8 oz water10.75 oz low sodium cream of mushroom soup3 russet potatoes washed and sliced thin (about 1.8 lbs)1 cup Galaxy Veggie Shredds, Mozzarella Flavor
Preheat oven to 375*F.
Brown ground turkey until 95% done then add 1 tbsp minced garlic and finish browning.
Wash and thinly russet potatoes.
Thinly slice the red onion.
Combine soup and water.
Spray baking dish with cooking spray. Spread a layer of potatoes then a layer of meat, onions and mushrooms and then another layer of potatoes. Cover with soup mixture.
Cover with aluminum foil and cook for 30 minutes or until potatoes are soft.
Spread 1 cup Veggie Shredds and recover with foil and cook 10 minutes more.
Makes 6 servings.
