Creamy Coconut Chicken

Ingredients
2.5 tbsp almond meal2.5 tbsp dessicated coconut1.3 cups light coconut milk3 tsp ground corriander3 tsp freshly ground ancho pepper3 tsp freshly ground ginger1 tsp sea salt3 chicken breasts -cubed4 cardamom pods2 bay leaves2 tbsp chopped fresh cilantro
Directions
Toast coconut and almond until just tan. Mix coconut/almond mixture, coconut milk, corriander, ancho, ginger & salt. For best results, put mixture in mason jar and let sit overnight, but it can be used immediately.
Heat oil in a pan and sear chicken breast cubes (along with bay leaves and cardamom). Add coconut milk mixture & corriander and cook 10-15 minutes until done.
Makes approximately 5 servings. Best if served over rice.
