Low Fat Broccoli Cheese Cornbread

2/3 cup all purpose flour1/2 cup yellow corn meal1 1/2 Tbsp granulated sugar (4 1/2 tsp)1 Tbsp baking powder1/2 tsp salt8 egg whites1 (10 oz) package chopped frozen broccoli, thawed and drained1 cup 1% milk fat cottage cheese1 small, or 1/2 large onion, chopped 1/2 cup unsweetened applesauce2 Tbsp butter, meltednon-stick baking spray
Preheat oven to 400 degrees F (200 degrees C).
Lightly grease an 11x7 inch baking pan with non stick baking spray.
Combine flour, corn meal, sugar, baking powder and salt. Mix well with whisk. Set aside.
In a separate bowl, mix together egg whites, cottage cheese, onion, unsweetened applesauce and butter. Slowly stir in the flour mixture. Fold in the broccoli. Pour batter into prepared pan.
Bake in preheated oven for 30 minutes, or until a toothpick inserted into the center of the pan comes out clean.
