Mighty Muffins adapted From Engine 2 Diet

Ingredients
3 cups Legacy GF Oat Bran1 tsp Baking Soda1/2 tsp salt4 Tbls brown sugar packedJuice of 1 lemon6 ripe bananas, mashed1/4 cup Walnuts or Pecans1/4 cup Dried Tart Cherries, unsweetened or Raisins3/4 cup water, or more
Directions
Preheat oven to 375 degrees F
Mash bananas in large bowl; add brown sugar and lemon juice; mash again. Add water and and mix well.

In medium bowl, mix oat bran, baking soda and salt.

Gradually add oat bran mixture to banana mixture, mix well.
Add cherries and nuts and mix again.

Spray muffin pan with Pam. Evenly distribute the batter among a 12 cup muffin pan.
Bake 40 minutes in center of oven
Each muffin is 220 calorie and 6.8 grams fiber
