Spicy Sweet Potato and Carrot Soup

Ingredients
1 Sweet potato2 small sweet peppers1 cup of baton carrots2 dessert spoons of olive oil0.5 of scotch bonnet pepperHerbs de provence2 teaspoons ground ginger1 teaspoon of garlic powder
Directions
Peel and dice sweet potato
Peel and dice carrots
Open can of plum tomatoes
Fry onions in olive oil
Add sweet potato, carrot and seet peppers and a litre of water then add scotch bonnet.
Simmer on high heat for about 10 minutes then lower the heat and add herbs, ginger and garlic and allow to simmer for 15 -20 minutes.
