Santa Fe Tortilla Company Carb Chopper Wheat Tortilla, 2 servingsSpinach, fresh, .25 cupOnions, raw, 2 slice, thinMushrooms, fresh, 8 slices (2 whole mushrooms)Pepperoni, 12 slice (1-3/8" dia x 1/8" thick)2% Mozzerella, 0.25 cupAmish Butter, 1 tbsp (or non-stick spray)
1. Thinly slice onions, mushrooms, and pepperoni.
2. Layer one tortilla with ingredients - mushroom, pepperoni, onions, cheese, and spinach. Top with other tortilla
3. Melt butter in pan or griddle (or spray the pan with pan spray. Place quesadilla on pan or griddle and cook 3-4 minutes until light brown. Flip quesadilla over and continue cooking on the opposite side an additional 3-4 minutes until tortilla is light brown and ingredients are heated throughout (you may have to mash down with spatula if too thick). If you are making more than one, serve right away or hold in a warm oven until all quesadillas are cooked. Remove from oven and cut each quesadilla into 4 triangles.
Makes 4 slices with 2 slices per serving
Note: If you want to be creative and add some grilled chicken or cooked ground beef in your quesadilla, you may need to add more cheese and have to use large spatulas for flipping.
