Six Layer dip

Ingredients
1.5-2 cups brown rice, cooked1 cup salsa, either homemade or store bought1 can black beans, rinsed1 16oz container of Oikos brand Organic Greek Yogurt, plain1 can mexicorn (12oz)- either Green Giant or Del Monte12 oz guacamole
Directions
Preheat oven to 400. In a 9x9 baking dish, place ingredients in layers order of list- rice, salsa, black beans, Oikos Greek yogurt, mexicorn, guacamole or avocado. You can sprinkle parmesan or your choice of cheese on top if you like. Bake in oven for 15 minutes or until you can see the guacamole on top bubbling. Remove from oven, and enjoy!

I made this and served it at a party, and only after everyone tasted it did I tell them I substituted greek yogurt for sour cream. They loved it! Enjoy with tortilla chips, or you can make your own chips from whole wheat tortillas or Flat-Out brand wraps(this is what I prefer). I brought my own little bag of Flat-Out chips for myself and served tortilla chips for everyone else. I prepared this the day before and refrigerated it for nearly 24 hours before I baked it just to save time.
