home made Chicken Vegetable Lentil Soup

Ingredients
1 medium onion2 celery stocks3 small carrots 3 large mushrooms1 cup sweet red pepper3/4 cup sweet snap peas2 small garlic cloves1 cup lentils1 tbsp EVOO1.5 cup cooked roasted chicken- light meat
Directions
chop onion, carrots, celery, mushrooms , sweet red peppers
saute a few mins in EVOO with garlic.
Add chicken stock, lentils
cook until lentils are soft.
add chopped chicken and snap peas
reheat
serve and enjoy
