Vegetable black bean soup

Ingredients
2 c. chopped onions1 c. chopped carrots1 c. chopped celery6 c. water3 beef bouillon cubes1 28 oz can diced tomatoes, undrained1 15 oz. can black beans, drained and rinsed1 c. quick-cooking barley1 t. garlic powder1 t. pepper1 10 oz. package frozen spinach, thawed
Directions
Saute vegetables over medium heat, about 8 minutes. Add water, bouillon, tomatoes, beans, barley, garlic powder and pepper. Bring to boil, cover, reduce heat, and simmer 10 minutes. Add spinach, simmer for 10-15 minutes or until vegetables are tender. Serves 10
