Blackberry Oat Pancakes

Ingredients
2 Cups Whole Grain Oats1 Cup Fat Free Cottage Cheese4 Large Eggs (I used 3 eggs and egg white substitute for the 4th egg)2 Teaspoons Vanilla Extract2 Cup Blackberries
Directions
In a blender or food processer, combine oats, cottage cheese, eggs, and vanilla extract. Blend of pulse until smooth. Gently stir in blackberries. Heat in a large, nonstick skillet over medium heat. Coat pan with cooking spray. Spoon about 1/4 cup of batter for each pancake. Cook for 3 minutes, or until tops are covered with bubbles and edges looked cooked. Flip over, and cook for about 3 more minutes or golden. Makes 10 pancakes.
