Chicken and Broccoli Stir Fry

Ingredients
1 lb. fresh broccoli2 tbsp. cornstarch3 tbsp. soy sauce2 whole skinless chicken breast3 tbsp. oil1 lg. onion, chunked2 clove garlic, minced0.75 cups white rice1.5 cups chicken broth
Directions
Start rice and broth in rice cooker.

Remove broccoli florets; cut into bit size pieces. Combine 3/4 cup water, 1 tablespoon cornstarch and 2 tablespoons soy sauce; set aside. Cut chicken into thin strips.
Combine remaining cornstarch and soy sauce; stir in chicken and coat thoroughly. Heat 1 tablespoon oil in large frying pan or wok over high heat. Add chicken; stir-fry 1-2 minutes until chicken is brown.

Remove from pan. Heat remaining oil and add remaining ingredients. Stir-fry 4 minutes until broccoli is tender. Stir in chicken mixture and sauce. Bring to boil; cook and stir until thickened.

Serve over rice. (included in nutritional calculations)
