Imjadara (Lentils and Wheat)

Ingredients
2 C lentils8 C water1 C fine or medium cracked wheat1 T salt3/4 tsp pepper1 large onio diced2 T oil
Directions
Rinse lentils in cold water. Add to pan with 8 cups water. Do not cover. Boil about 20 minutes, until lentils are soft, then add wheat. Add salt and pepper and cook another 15 minutes, stirring occasionally to prevent sticking, until all liquid is absorbed. Fry onion in oil. Mix into prepared lentils. Serve in half piece of whole wheat pita.

    This was very good once I cut the lentils to 1/2 C, cracked wheat to 1/4 C, put a bay leaf in w/ the lentils while they boiled & still used the same amt of onion (1 Large) & let the onion cook until it was good & caramelized. - 5/6/09
