Healthy Vanilla Crepes

1 1/2 c. milk3 eggs (I used 2 egg white and 1 whole egg)1 Tbsp. vanilla1 1/2 c. sifted flour1/2 tsp. salt2 Tbsp. margarine or butter
Blend milk, eggs and vanilla in blender on lowest setting. Sift flour into blender while its on low. Add salt and butter at the end.
Heat a small frying pan on medium-low. When pan is hot, pour a scant 1/4 cup into the pan and roll the pan around until it evenly covers the bottom. cook until the edges are dry and lifting off the pan. Check to see if the bottom is slightly golden and if so, flip to cook the other side. Stake crepes on a plate when finished or serve immediately.
Makes approx. 20 small crepes.
