Spinach Pizza

Ingredients

Crust1 cup hot water1 Tablespoon sugar1/4 cup olive oil1 tsp sea salt1 pkg yeast1 1/2 cup oat flour (made my own by running oatmeal through the food processor till it was a bit finer than whole wheat flour)1 1/2-2 cup flour Alfredo sauce Garlic 6-10 cloves pressed or chopped (we decided more would have been better) saute in 1 T. butter8 oz block fat free cream cheese1/4 cup milk 2-3 cups of chopped fresh spinach1 cup of "Itallian blend" cheese
Pre heat oven to 375
Crust
Stir together first 6 ingrediants, add flour until firm dough is formed (I use my kitchen aid mixer) It may take a bit more or a bit less than 1 3/4 cups to make a good dough. Roll flat and place in pizza pan that has been lightly greased with olive oil.
Alfredo sauce
In heavy saucepan over low heat saute the crushed or finely chopped garlic in butter. Add milk and cream cheese, stirring constantly. Add parsley and pepper.
cook until smooth. I did have to use my stick blender to get it smooth because its harder to get the fat free cream cheese to blend well. Spread sauce over pizza crust.
Coarsely chop 3 cups of fresh spinach and spread over sauce on crust. Top with one cup of Itallian blend cheese. (It has Mozzerella, Provalone Parmesan, Romano, Fontina, and Asiago cheese in it)
Bake about 20 minutes until cheese is melted and crust is browning.
spread alfredo sauce over crust, add spinach and then the cheese. Bake about 20-30 minutes.
Makes a large pizza that can be cut into at least 10 slices. Serve with a nice green salad. I like to put just about a tablespoon of lite Italian dressing over my salad in the bowl and then toss McCormick seasoning blend over that (Bel pepper roasted garlic is a favorite)
