Edamame Salad

Ingredients
4 Cups Shelled Edamame2 Tbl Minced Parsley or Cilantro2 Tbl Fresh Lime or Lemon Juice1 Tbl Olive Oil1/2 tsp Black Pepper1/8 tsp Salt1/2 Cup Parmesan
Directions
Cook Edamame in boiling water to cover 3 minutes. Drain in plunge in cold water and drain.

Combine Cilantro and next 4 ingredients in a medium bowl, stirring with a whisk. Add edamame and toss well. Sprinkle with cheese
