* *Chick Peas, 1 cup * *Ancient Harvest Traditional Whole Grain Quinoa, 1 serving =.25 cup dry, 0.5 cup * California Navel Orange - medium orange (131g), 1 serving * Asparagus, fresh, 8 spear, medium (5-1/4" to 7" long) * Sweet potato, cooked, baked in skin, without salt, 1 small * Ginger Root, 1 tsp * Cinnamon, ground, 1 tsp * Orange Juice, 15 mL
wash stab and bake sweet potato at 400 for 45 minutes. Cook 1/2 C dry quinoa in 1 cup of water as per package instructions.
Chop asparagus and simmer in a pan with a tiny bit of water until bright green. add grated ginger, cinnamon, cooked quinoa, 1 orange peeled sections cut in 3, and chopped cooked sweet potato. Heat and serve
