Ingredients
turmeric, salt, red pepper flakes to taste. 1/4 c. artichoke, chopped. One clove garlic, chopped. Tbsp. olive oil. 2 c. raw spinach. 3 eggs. 1/4 c. mushrooms, drained. 2 oz. mozzarella chesese
Directions
Heat spices on med-high for a few minutes. add coconut oil, onion, artichokes, garlic, and mushrooms. Saute until mushrooms crisp and onions clear. Turn down heat to medium and add spinach and stir. cover. Cook until spinach wilted stirring occasionally. Beat eggs and then pour over sauteed vegetables and wilted spinach. Cook until eggs are done. Top with mozsarella cheese.
