Chicken Leek soup - slow cooker

Ingredients
2 lbs chicken breast tenders, diced2 - 3 leeks1 large potato with skin on, finely diced2 cups finely diced raw carrots1 cup finely diced celery1/2 cup olive oil1 qt (1 carton) chicken broth1 packet Slow Cooker Chicken Noodle seasoning5 cups water
Directions
Place broth, water, slow cooker seasoning and raw diced chicken breast into crockpot and turn it on high.

Finely chop the white portions of the leeks, just up to where they start becoming nicely green.

In a large saucepan, add all of the chopped vegetables and the olive oil. Sautee, stirring frequently, until the vegetables become very aromatic and soften. Remove from heat.

In a blender, ladle in about 1 - 2 cups of the broth mixture from the crockpot and several large scoops of the sauteed vegetable mixture. Blend until pureed and add to crockpot. Repeat until all vegetables have been pureed.

Stir thoroughly in crockpot. Continue cooking on high for 4 hours, until chicken is cooked all the way through.

Garnish with a little greek yogurt or sour cream and some finely diced scallions, if desired.
