Asparagus In Parsley Sauce

Ingredients
2 tbsp margarine2 tbsp all purpose flour1/8 tsp freshly ground black pepper1 1/2 cups low sodium chicken broth2 egg yolks1/2 cups 1% milk1 cup minced fresh parsley1/2 cup Parmesean Cheese, grated24 medium/large fresh asparagus spears
Directions
In a large skillet, melt butter over medium heat. Stir in the flour and black pepper until smooth. Gradually whisk in broth. Bring to a boil; cook and stir 1-2 minutes or until thicken. Remove from heat.

In a small bowl, combine egg yolks and milk. Stir a small amount of hot broth mixture into egg mixture. Return all to the pan, stirring constantly. Bring to a gentle boil; cook and stir for 2 minutes or until thickened. Stir in parsley and parmesan cheese; when well blended add steamed asparagus and cook for 1-2 minutes. Then serve. Makes 6 servings.
