Asparagus Baked Fritata

Ingredients
2 scallions1 1/2 egg substitutes1 cup fat-free ricottapinch of Italian seasoning1 1/2 cups steamed asparagus
Directions
Spray small skillet with nonstick spray. On medium heat saute scallions about 2 minutes. Add Asparagus. Whisk eggs and ricotta and Italian seasoning. Pour over vegetable mix in frying pan. cook a few minutes than pop in the oven and cook until brown about 25 minutes
