Kohlrabi Turnip Soup

Ingredients
Earthly Delights Organic Quinoa, 1/3 cup Kohlrabi, raw, 2 whole or about 1 1/3 cupTurnips, 1 cup, slidedCanola Oil, 1 tsp Ginger Root, about 1"x1"x1" chunk (about 25 grams)Kirkland Organic Chicken Broth, 4 cup Water, tap, 1 cup (8 fl oz), optional. Salt and meat may also be added if desired.
Directions
Make 4 1-cup servings.

Mince or shred ginger.

Peel and slice kohlrabi and turnip to bite size slices about 1/8 inch thick.

Rinse quinoa.

Heat oil in 3-4 quart pot. Add ginger, quinoa, and vegetables. Lightly brown. Add broth.

Bring mixture to boil and then simmer for 12-15 minutes. Soup is done when thin white spiral appears around quinoa grain.
