Chicken Gizzards in White Wine Sauce

Ingredients
2 lbs Chicken Gizzards4 cups water 1 small Onions, raw, chopped1/2 cup Red Peppers fresh, .5 cup, chopped3 large cloves Garlic - chopped2-3 Red Ripe Tomatoes (Roma) 1 cup, chopped Lea & Perrins, Worcestershire Sauce, 3 tspSalt, 1 tspPepper, black, 1 tsp1 tsp Achiote Paste1 cup White Wine2 cups White Rice, medium grain, (4 cups cooked)
Directions
Place the chicken gizzards in 4 cups of water, add salt and garlic, bring to boil. Reduce to medium simmer and cook for 45 minutes. After 45 minutes add the onions, peppers, tomatoes, pepper, worchestershire sauce, achiote and white wine. Cook down to reduce the wine (about another 20 minutes). Serve over the rice. Can be served with tortillas if desired. Makes approximately 8 1-cup servings
