Egg and Wilted Spinach Salad

Ingredients
1 6oz bag baby spinach2 medium apples3 tbsp olive oil2 tbsp balsamic vinegar1 tbsp honey8 eggs4oz goat cheese
Directions
Put spinach in a large bowl, set aside.
In a large skillet, cook apples in 2 tbsp olive oil for 3-4 minutes (until tender). Stir in vinegar and honey. Bring to just boiling. Add spinach, toss to wilt. Remove from skillet.
In same skillet, heat 1 tbsp olive oil over medium heat. Break 4 eggs into skillet. Spinkle with 1/2 cheese, 1/8 tsp each salt and pepper. Decrease heat to low. Cook 4-5 minutes until egg whites set. Repeat with remaining eggs and cheese.
