Bacon, rocket and quinoa salad

Ingredients
Bacon, Back, Lean (UK), 150 g Quinoa Uncooked, 100 gram Sainsburys Wild rocket (70g bag), 70 gram(s) Spinach, fresh, 2 cup Spring onions, 25 gram(s) Paprika, 0.5 tsp Lemon Juice, 0.5 lemon yields Balsamic Vinegar, 1 tbsp Extra Virgin Olive Oil, 2 tbsp Karyatis roasted red peppers 100g chopped
Directions
Heat oil over medium/high heat and fry chopped bacon, once golden, turn down heat and add garlic and paprika and chopped roasted red peppers.

Bring 1 litre of water to boil, rinse quinoa in warm water and add to boiling water. Cook on fast simmer for 12-15 minutes, then drain and set aside.

Stir the quinoa into the bacon pan with the vinegar and lemon juice and a grind of black pepper.

Pour over salad, scatter with spring onions and serve
