Chicken Lemon Alfredo

1 small Onion, finely sliced1 clove Garlic, minced 1 Tbsp Butter 1 1/4 Cup Low-Fat Buttermilk 1 large Egg yolk 2 tsp Lemon Zest, grated 1/4 cup Low-Fat Mozzarella, grated 12 oz Whole Wheat Linguine, with some pasta-cooking water Seasoning: salt, pepper,grated Parmesan cheese
Cook onion in a skillet with butter over med heat until golden, 3 min. Whisk buttermilk, egg and lemon zest in a bowl; reduce heat to low and whisk into the skillet along with mozzarella. Whisk until slightly thickened, 2 min. Season with salt and plenty of pepper.
In a separate skillet add 1 tbsp of olive oil and chicken breast and saute until done. Cut up in pieces or leave whole, whichever you prefer. Toss sauce with cooked pasta and some pasta water. Top with more grated Parmesan cheese if desired.
