Thai Fish Mix

Tilapia, 1.1 poundsTrader Joe's Red Curry Sauce, 1 cup Trader Joe's Organic Foursome Frozen veggies, 1 bagTrader Joe's Lite Coconut Milk, 1 canCauliflower- 1 small head florets removed, and cut small
Combine the curry sauce and coconut milk in a large pan (I used my wok). Simmer on medium, until pan is heated. Add cauliflower and turn up heat to medium high. Defrost veggies in microwave. Once cauliflower begins to soften, add veggies.
Meanwhile, cut up tilapia (or other white fish) into 1x1 (approx) cubes.
Once veggies have softened, add tilapia. Keep stirring until everything is combined, and fish is cooked.
Add soy sauce (as you will loose the original flavor and kick once all ingredients are added) at the end and mix together.
Serves 4
