Lamb Roast

Ingredients
2.5lb boneless leg of lamb roast1 large purple onion1 cup pinot noir 2-3 cups water2 cups beef broth1/4 oz dried porcini mushrooms3 cups quartered red potatoes2 1/2 cups chopped (1 med sized) rutabaga1/3 cup chopped green onions (greens)2 cups large chopped carrots
Directions
slightly cook lamb on all sides in a large skillet on med-high

place lamb along with all ingredients (Except carrots & potatoes) into a large slow cooker. (add 2 cups water to start)

set slow cooker to cook on high for 6 hours.

after 1.5-2 hours, place potatoes and carrots in pot along with additional 1 cup water if needed.
