Banana Cake/Bread using Xylitol (low carb, low sugar)

Ingredients
1 cup olive oil mayonaise2 eggs4 medium ripe bananas2 tsp vanilla extract2 cups unbleached all purpose flour1 cup whole wheat flour3/4 cup Brown Xylitol1 cup semi sweet chocolate chips2 tsp baking soda2 tsp celtic sea salt2 tsp cinnamon1 tsp baking powder*nuts, flax, wheat germ, whey protien etc as you desire
Directions
-Preheat oven to 350 degrees Fahrenheit (if using glass pans, 325 degrees F)

-in a large mixing bowl, mash bananas, mix in mayonnaise, eggs and vanilla extract.

-in a separate bowl combine the remaining dry ingredients.

-Add the dry ingredients to the wet ingredients.

-stir in chocolate chips or nuts etc of your choice, if desired

-divide the batter into two greased (or use nonstick cooking spray) 9x11 pans or loaf pans.

-Bake in the center rack of the oven for 45-50 min (60-70 min in loaf pans)

*note* if using a convection oven the cooking time will be less. check the cake/bread at lease 10 minutes prior to minimal baking time by inserting a toothpick. If it comes out clean, it's done.

-Let stand 10 minutes; remove from pan to finish cooling

-slice into 18 equal pieces (per pan)

*Yields two 9x11 cakes or 2 loaves
