Instant Potato Gnocchi

Ingredients
1 C. instant mashed potato flakes1 C. boiling water1 egg1 1/2 C. white flour1/2 tsp. dried basil1/4 tsp. garlic powder1/8 tsp. each of salt & pepper6 C. waterPasta sauce of your choiceGrated Parmesan (or my personal favorite-Romano)
Directions
1. In a large bowl add potato flakes and one cup of boiling water; add egg. Stir in flour & seasonings. On light floured surface, knead dough 10-12 times.

2.Divide dough into 4 sections. On floured surface, roll each section into 1/2 in. thich ropes; cut into 3/4 in. pieces. Press & roll each piece with a lightly floured fork.

3.In Lg. saucepan, bring 6 cups of water to boil. Cook gnocchi in batches for 30-60 seconds or until they float. Serve with choice sauce and cheese.

Makes 4 ( 1 1/2 C.) servings.
